The beech mushroom is very popular in Japan, where it is intensively cultivated.
It is native to the temperate climates of Europe, Asia and North America.
 
Grows on:  elm, beech, birch, poplar, willow, oak, maple and other hardwood.
 
Preparation and taste: “Aromatic matsutake, tasty shimeji” is a Japanese expression. Its sweet nut-like taste is highly appreciated.
Stir fried, used in soups and sauces.
 
Attributed medicinal properties: Recent Japanese research shows that this species is very effective in reducing cancer cells.
