Hericium corraloides
Kammetjesstekelzwam (Dutch)
Comb Tooth

This beautiful mushroom is on a red list in The Netherlands, meaning it is rare and protected.
Unfortunately, the dead beech this mushroom thrives on is often removed.

Range: North America, Europe, China and Japan.

Grows on beech, oak, walnut, maple and other hardwood.

Preparation and taste: Young mushrooms taste delicious and go well with garlic, onions and almonds.
When the dish is almost finished, add a little bit of butter to bring out the flavour of lobster.

This species is known to have a positive effect on tumours and inflammations as well.
